With its delicate, milky richness and enchanting flavours, Rasmalai holds a special place in the hearts of those with an insatiable love for sweets. The Kolkata connection

Not many would know, but this delicious sweet dish was first made in Kolkata as part of a science experiment. Recently, Sarada Charan, who is the great grandson of Kolkata’s most famous sweet shop KC Das told a leading daily that Rasmalai was first made as an experiment. He was a research assistant and during this time he read about reverse osmosis process. Using this process, Sarada first learned to preserve the sweet rasgulla and invented ‘canned rasgulla’. His father KC Das thought of taking this experiment further and thus invented Rasmalai.

How did Rasmalai become popular?

It is believed that the place where the shop of the Das family stood was surrounded by the Marwari community. The credit goes to the Marwaris for making this sweet dish accessible to the people. He worked to spread this sweet dish across the country. As its popularity grew, so did people experimenting with its flavours. From plain Rasmalai to saffron and cardamom Rasmalai, people started liking it.

Legends associated with Rasmalai

There is another story behind the making of Rasmalai. This sweet dish is believed to have originated in Comilla, Bangladesh. People started eating rasgulla by soaking it in thick creamy milk. It was initially called Kheer Bhog. Over time it was made shorter so that it was easier to soak. At the same time, when West Bengal was partitioned, its name was also changed. It was the Sen brothers of Comilla who claim that Rasmalai is made by their family and they have also applied for GI tag for this sweet.

Rasmalai is a popular Indian dessert that originates from the state of Bengal. It is a delightful sweet made from soft and spongy cottage cheese dumplings, also known as ‘rasgullas’, which are soaked in a luscious, creamy, and aromatic milk syrup flavored with cardamom and saffron. The dumplings absorb the flavours of the sweetened milk, creating a heavenly texture that melts in the mouth. Rasmalai is often garnished with chopped nuts like almonds and pistachios, adding a delightful crunch. This luxurious dessert is a beloved part of Indian cuisine, enjoyed on festive occasions and special celebrations.
